Apple recipe for Rosh Hashanah

I f you want to go a little non-traditional for Rosh Hashanah, and want to eliminate the honey cake, try this apple dessert.

APPLE-NUT BREAD
one-quarter cup unsalted margarine
two-thirds cup sugar
two eggs
two cups flour
one t. baking powder
one t. baking soda
two cups grated raw apples
one-half cup chopped nuts
one t. vanilla
1. Preheat oven to 350°F.
2. In a mixer, beat margarine and sugar until light. Add eggs.
3. Add flour, baking powder and baking soda alternately to creamed mixture with apples.
Stir in nuts and vanilla. Turn into a greased loaf pan. Bake in a preheated 350°F. oven 55 minutes or until a toothpick inserted in the center comes out clean.
Optional: combine cinnamon, sugar and nuts, sprinkle on top before baking
